Eating Healthy in Your RV

So you have decided to take a family vacation in an RV.  The plan is to drive from one side of the country to the other.  You’re probably going to be spending a lot of your time on the road while driving from place to place.  Chances are the entire family is going to be sitting around, just trying to keep busy until you reach your destination.  While you’re traveling in the RV, there should be plenty of time to prepare a good meal.  Though it is easy to just stop off at the local fast food joint or convenience store, you should use the resources available in your RV to provide your family with healthy snacks and meals.

The first thing you need to do is be well prepared in advance.  Before you leave for your trip, head to the local market and do a little bit of shopping.  When it comes to perishable items, only buy enough to last a couple of days.  Plan your meals ahead of time and only get the stuff that you need.  Make sure you’re stocked up on condiments and basic items that you may need.  It’s a good idea to grab these items from your house to limit the amount of money you need to spend at the store.

As far as snacks go, skip potato chips and junk food.  Fresh fruit and vegetables make the ideal snack foods.  If you have to have chips, try finding some baked pita pieces or something similar.  These are typically a bit lower in calories and fat compared to their deep fried counterparts.

The best meal ideas are those that are quick and simple yet still healthy for you.  A basic stir fry is one easy option.  Get some boneless skinless chicken breasts, vegetables, and rice.  Typical vegetable choices include onions, peppers, broccoli, or anything else that you know your family will like.  First, you’ll want to start your rice in a covered saucepan.  Follow the directions on the package and prepare about ½ to ¾ cup per person.  Chop up the veggies and cook them in a frying pan with a little bit of extra virgin olive oil or stir fry oil.  When they are finished, take them out of the pan and set aside.  You’ll want to cut your chicken into bite sized pieces and cook it in the same frying pan.  Add a bit more oil if needed and cook until the chicken is lightly browned.  Add the vegetables and season with some salt, pepper, and red pepper flakes if you desire a bit of heat.  Use a bit of soy sauce to help deglaze the pan and add flavor.  Serve over rice.

Other good alternatives include fresh fish or any local fare you can find during your travels.
